Khaman Dhokla

Recipe Type: Snack

Time: 30mins

Healthy Snack

Ingredients:
1cup - Chickpea Flour 
as required - Water  
1/2 tsp - Baking Powder 
1/2tsp - Soda-bi-carb  
6tsp - Sugar 
A few - curry leaves 
1 tsp - mustard seeds 
1/2tsp - Hing 
to taste - salt 
1tbsp - oil 
1tsp - Green chilly ginger paste 
1tsp - Fruit salt 
1/2cup - Freshly grated coconut 
1/2 cup finely chopped coriander leaves 

Method:
In a Grinder grind chickpea flour,salt,baking powder & soda-bi-carb. Remove in a bowl add water salt and  green-chilly ginger paste mix well. Get the steamer ready grease a thali with little oil add fruit salt to he batter and immediately  pour it on to the greased thali and steam for 15-20 mins. 
Remove cool cut into squares. Make sugar syrup (sugar+water) pour on to it give tadka of hing,curry leaves & mustard. Garnish with freshly grated coconut & coriander leaves. Serve with chutney of your choice. Enjoy...

Savory Muffins

Recipe Type: Tea Time Snack / Ideal for                            children lunch box
Preparation Time: 20mins

Ingredients: 
2 cups - APF (all purpose flour)
2 tsp - baking powder
2 small eggs
1/2 cup oil
1 cup milk  
1/2 cup grated cheese
1/2 cup chopped vegges (mushroom,carrots,sweet corn etc)
2 tbsp minced meat (sauted in onion, ginger garlic & green chillies)

Method:
Sieve the flour & baking powder in a large bowl. beat the eggs & oil together till light & fluffy.
Combine all the ingredients making sure that you add the sieved flour at the end.
Pour this batter in a well greased muffin tray & bake in a pre heated oven for 20 - 25 mins. Serve hot.

Simple Pound Cake

Preparation Time: 1hr 30mins         

Ingredients:

11/2 cup - all purpose flour
1cup - castor sugar
1/2 cup - milk
2 nos - eggs
1/2 cup - melted butter
1 tsp - baking soda
1 tsp - vanilla extract

Method: With a stand mixer or a hand beater beat the sugar & melted butter. Incorporate the eggs one by one and beat it well until stiff and fluffy and milk. Sift the dry ingredients and gradually incorporate in in the egg mixture. Add vanilla extract. Pre heat the oven at 180 degree celcius. Grease a 8" round tin pour the mixture and bake it for 40 mins. let it cool a bit de-mould and there you go moist fluffy pound cake ever.

Amritsari Fish Fry

Preparation Time: 10mins (excluding marination time)

Recipe Type:  Starter

Ingredients:
Fish Fillet – 250gms
Redchilly powder –  2tsp
Lemon Juice – 2tbsp
Ginger garlic paste – 1tbsp
Salt to taste
Gram flour – 1cup
Ajwain – 1tbsp
Curd – ½ cup
Cornflour – 2tbsp
Egg – 1 no (optional I do not prefer it)
Chat masala – for garnishing
Oil for frying – (one can alternately use an air fryer or grill it in the oven at 180degree celsius for 20mins)

Method:
Dice the fish fillet into one inch pieces. Marinate them with ginger garlic paste, lemon juice red chilly powder & salt for 20mins. Make a thick batter of gram flour, ajwain, curd, corn flour, salt, egg. Dip the marinated pieces of fish into the batter and fry as per your choice. Garnish it with dash of lemon, chaat masala & mint leaves.



Channa Dal & Dill Tikkis

Preparation Time: 20mins

Recipe Type:  Starter

Even good to serve at tea time

Ingredients:

Channa Dal – 250gms (soaked overnight)
Green Chillies – 6-8 as per taste
Ginger – 1”pcs
Whole garam masala – (clove – 2, cinnamon stick – 1” pcs, peppercorns – 5nos)
Corriander leaves – ½ cup
Dill leaves – 1 cup
Onion – 1 cup finely cubed
 Salt to taste
Oil for shallow frying – (one can alternately use an air fryer or grill it in the oven at 180degree celcius for 20mins)

Method:

Grind all the above ingredients except  coriander leaves, dill leaves and onion. Please note the batter should be thick enough to make tikkis and also when you will add the onions to it , it will further liquidize. Now add the chopped ingredients and make tikkis fry as per your choice as mentioned above. Serve hot with green chutney and tomato ketchup.

Creamy Spinach in Corm



Recipe Type: Main Course

Time: 20 mins

Very Healthy rich in Iron & Calcium

Ingredients:

Sweet Corn Kernels - 50gms
Spinach finely chopped - 1 bunch
Button mushrooms diced - 10 nos
Skimmed milk - 150ml 
Wheat flour - 20gms 
Butter - 50gms
Garlic chopped - 1tsp
Grated cheese - 1tbsp (optional of your choice.Mozerella or processed goes well)
Chilliflakes - 1tsp 
Pepper - 1tsp  
Salt to taste
Parsely for garnishing

Method:

Heat butter in a wok saute wheat flour till it changes colour. Gradually add milk, let it boil until creamy. Toss veggies (garlic,corn,mushroom,spinach) in a pan with seasoning. Add this to the creamy mixture. Correct the seasoning at this stage add the cheese bring it to a boil. Garnish with chopped parsely & chilli flakes serve hot with Garlic bread.Enjoy....
