Mumbai Vada Pav

INGREDIENTS:

FOR VADAS

Boiled Potatoes -  1/2kg
Coriander Leaves - 1/2 cup
Green Chillies - 5nos
Garlic Cloves - 5nos
Ginger - 1/2" pcs 
Oil - 2-3 tbsp
Asafoetida - 1/2tsp
Tumeric Powder - 1tsp
Cummin Seeds - 1tsp
Mustard Seeds - 1tsp
Curry leaves - 10-12nos
All Spice Powder - 1/2tsp
Lemon Juice - of 1/2 lime
Salt - to taste

GRAM FLOUR COATING:

Gram Flour - 3cups
Soda-bi-carb - 1/2tsp
Carrom Seeds - 1tsp
Water - as required 
Salt - to taste

FOR GREEN CHUTNEY

Coriander Leaves - 1cup
Green Chillies - 5-6nos
Garlic Cloves - 4-5nos
Salt - to taste 

FOR RED CHUTNEY

Red Chilly Powder - 2tsp
Garlic Cloves - 6-7nos
Gram Flour Crisps - 2cups
Bread Toast - 1nos
Salt to taste

FRIED GREEN CHILLIES 

Green Chillies - 6-7
Salt - 1 generous pinch

Mumbai Ladies Pav - 12 Nos

METHOD:

- Mix the gram flour with all the ingredients 
- Add water gradually
- Make the batter of moderate consistency 
- Rest for min 30mins
- Green Chutney - Grind all the ingredients adjust the consistency and salt content
- Red Chutney - fry the garlic cloves and make gram flour crisps (Just pass the gram flour batter through a sieve in hot oil and fry till crisp) with other ingredients and pluse.
- Heat oil add asafoetida, mustard seeds, cummin seeds, curry leaves, add salt and 
tumeric.
- Add boiled  potatoes mix well. 
- Add coriander leaves mix well.
- Add lime juice and all spice powder and mix.
- Cool and shape them as you desire, I have given them a patty shape and dip them in gram flour batter and fry till crisp.
- Assembling - centre cut the pav, spread the green chutney place the piping hot Vada sprinkle the red chutney, add the fried chilly and close the pav..tada enjoy zhanzhanit Mumbai Vada Pav

PS: You can add sweet and sour tamarind chutney. Add cheese stuffing to your vada.
For health conscious people use sweet potato instead of regular potatoes and fry them in appe pan.

Mug Chocolate Lava Cake

Mug Chocolate Lava
Cake.

Recipe Type: Dessert
Time Required : 5mins
Serves : 2 person

Ingredients:
Butter 2tbsp
APF 2tbsp
Sugar 4tbsp
Chocolate chips 6tbsp
Egg 1no
Nutella truffle 2 nos
For garnish: 
Ice cream 1scope
Chocolate sauce  1 tbsp
Sprinklers if your choice

Method:
Microwave or double bill butter and chocochip until well combined approx 30seconds. Gently mix fine granulated sugar, one egg and mix well. Now add the flour and mix. Divide equally into two microwavable mugs insert the nutella or plain truffle ball and microwave for 1min. Remove let it rest for another min.

Garnish with a scope of ice cream drizzle some chocolate sauce sprinklers or Juts of ur choice insert two waffer straws. Scope yummmm.

Akori / Bhurji Pav

 


Akori/Egg bhurji Pav

For Akori
Ingredients:
Eggs - 4 nos
Onion - 5nos
Green chillies - 4nos or as per your taste
Garlic cloves - 5-6
Ginger - 1" PCs
Salt - 5gms or as per taste
Cummin seeds - 1tsp
Tumeric - 5gms or 1tsp
Coriander powder - 5gms or 1tsp
Coriander leaves - 1 fist full
Tomato - 1big
Oil - 4tbsp

Method:
If you have a food processor it's simple or finely chop :- onions,gingergarlic,greenchillies,tomato,corriander leaves
Now heat oil in a wok add cummin seeds, all the chopped ingredients once well done and oil starts floating add the dried powders (tumeric,salt,corriander powder). Saute all very well. Now gradually add beaten eggs . Let it rest for few mins on low flame. Now vigorously mix all garnish with coriander and tomato slices and grated cheese.

PS : I have not used cheese here it's ones own choice.

Ladi Pav:

Ingredients:

APF - 1cup
Yeast - 10gms
Milk powder- 10gms
Sugar - 1tsp to activate the yeast
Salt to taste
Warm water - to knead the dough
Butter or olive oil - 2tbsp

Method:

Sieve the APF. Make a well add activated yeast. (Soak yeast in warm water with a tsp of sugar for 15mins let it froth). Now add milk powder and knead with warm water until soft. Let it prove for 45mins. It will double in size. Deflate it add salt and oil or butter knead once again and rest it for 15mins. Now grease your tray make balls of the dough and place it like ladi and let it further prove for half an hour or until they have doubled in size. You can brush them with milk or egg whites and bake for 45min at 180 degree. Or add a packet of salt to a big vessel place ur tray and cover the vessel properly do not add any weight over it. Let it cook on medium flame for 40 - 50 mins. Hot ladi Pav will be done you can brush it with butter for the glaze look. Enjoy

Khaman Dhokla

Recipe Type: Snack

Time: 30mins

Healthy Snack

Ingredients:
1cup - Chickpea Flour 
as required - Water  
1/2 tsp - Baking Powder 
1/2tsp - Soda-bi-carb  
6tsp - Sugar 
A few - curry leaves 
1 tsp - mustard seeds 
1/2tsp - Hing 
to taste - salt 
1tbsp - oil 
1tsp - Green chilly ginger paste 
1tsp - Fruit salt 
1/2cup - Freshly grated coconut 
1/2 cup finely chopped coriander leaves 

Method:
In a Grinder grind chickpea flour,salt,baking powder & soda-bi-carb. Remove in a bowl add water salt and  green-chilly ginger paste mix well. Get the steamer ready grease a thali with little oil add fruit salt to he batter and immediately  pour it on to the greased thali and steam for 15-20 mins. 
Remove cool cut into squares. Make sugar syrup (sugar+water) pour on to it give tadka of hing,curry leaves & mustard. Garnish with freshly grated coconut & coriander leaves. Serve with chutney of your choice. Enjoy...

Savory Muffins

Recipe Type: Tea Time Snack / Ideal for                            children lunch box
Preparation Time: 20mins

Ingredients: 
2 cups - APF (all purpose flour)
2 tsp - baking powder
2 small eggs
1/2 cup oil
1 cup milk  
1/2 cup grated cheese
1/2 cup chopped vegges (mushroom,carrots,sweet corn etc)
2 tbsp minced meat (sauted in onion, ginger garlic & green chillies)

Method:
Sieve the flour & baking powder in a large bowl. beat the eggs & oil together till light & fluffy.
Combine all the ingredients making sure that you add the sieved flour at the end.
Pour this batter in a well greased muffin tray & bake in a pre heated oven for 20 - 25 mins. Serve hot.

Simple Pound Cake

Preparation Time: 1hr 30mins         

Ingredients:

11/2 cup - all purpose flour
1cup - castor sugar
1/2 cup - milk
2 nos - eggs
1/2 cup - melted butter
1 tsp - baking soda
1 tsp - vanilla extract

Method: With a stand mixer or a hand beater beat the sugar & melted butter. Incorporate the eggs one by one and beat it well until stiff and fluffy and milk. Sift the dry ingredients and gradually incorporate in in the egg mixture. Add vanilla extract. Pre heat the oven at 180 degree celcius. Grease a 8" round tin pour the mixture and bake it for 40 mins. let it cool a bit de-mould and there you go moist fluffy pound cake ever.

Amritsari Fish Fry

Preparation Time: 10mins (excluding marination time)

Recipe Type:  Starter

Ingredients:
Fish Fillet – 250gms
Redchilly powder –  2tsp
Lemon Juice – 2tbsp
Ginger garlic paste – 1tbsp
Salt to taste
Gram flour – 1cup
Ajwain – 1tbsp
Curd – ½ cup
Cornflour – 2tbsp
Egg – 1 no (optional I do not prefer it)
Chat masala – for garnishing
Oil for frying – (one can alternately use an air fryer or grill it in the oven at 180degree celsius for 20mins)

Method:
Dice the fish fillet into one inch pieces. Marinate them with ginger garlic paste, lemon juice red chilly powder & salt for 20mins. Make a thick batter of gram flour, ajwain, curd, corn flour, salt, egg. Dip the marinated pieces of fish into the batter and fry as per your choice. Garnish it with dash of lemon, chaat masala & mint leaves.
