Akori/Egg bhurji Pav
For Akori
Ingredients:
Eggs - 4 nos
Onion - 5nos
Green chillies - 4nos or as per your taste
Garlic cloves - 5-6
Ginger - 1" PCs
Salt - 5gms or as per taste
Cummin seeds - 1tsp
Tumeric - 5gms or 1tsp
Coriander powder - 5gms or 1tsp
Coriander leaves - 1 fist full
Tomato - 1big
Oil - 4tbsp
Method:
If you have a food processor it's simple or finely chop :- onions,gingergarlic,greenchillies,tomato,corriander leaves
Now heat oil in a wok add cummin seeds, all the chopped ingredients once well done and oil starts floating add the dried powders (tumeric,salt,corriander powder). Saute all very well. Now gradually add beaten eggs . Let it rest for few mins on low flame. Now vigorously mix all garnish with coriander and tomato slices and grated cheese.
PS : I have not used cheese here it's ones own choice.
Ladi Pav:
Ingredients:
APF - 1cup
Yeast - 10gms
Milk powder- 10gms
Sugar - 1tsp to activate the yeast
Salt to taste
Warm water - to knead the dough
Butter or olive oil - 2tbsp
Method:
Sieve the APF. Make a well add activated yeast. (Soak yeast in warm water with a tsp of sugar for 15mins let it froth). Now add milk powder and knead with warm water until soft. Let it prove for 45mins. It will double in size. Deflate it add salt and oil or butter knead once again and rest it for 15mins. Now grease your tray make balls of the dough and place it like ladi and let it further prove for half an hour or until they have doubled in size. You can brush them with milk or egg whites and bake for 45min at 180 degree. Or add a packet of salt to a big vessel place ur tray and cover the vessel properly do not add any weight over it. Let it cook on medium flame for 40 - 50 mins. Hot ladi Pav will be done you can brush it with butter for the glaze look. Enjoy
